Spicey fruit, brown sugar malt. Fizzy intense taste, reminds me of candy and sprite. Flavorful but not overly hardcore yeast(for my lambic tastes.) Ginger, clove. Dried fruit. Faint black licorice? Good sipping beer, remarkably smooth and tastey. By no means the best Belgian beer, but one that still satisfies the senses.
I was suprised to have browsed this forum and found no thread pertaining specifically to Chimay or Chimay Blue. Peace, HN-

Thanks for getting a ball rolling - I shared a Chimay Premiere (Rood) and a Cing Cents (Wit) with friends over the weekend. More for the pleasure of the beer and the company, so no review - but both were quite good.

Fantastic. It and Orval rank right up there as 2 of my all time favorites. Delirium Tremens is super tasty too.

i concur , chimay is an excellent brew! i like the cinq cents best myself! orval is still a hard one for me to understand. i went to hollingshead this weekend and had a roastbeef and blue cheese sandwhich, i paired it with a westmalle double....delish! of all the trappist ales i think i like the achel 8 the best ,although they are the newest of the six.........well maybe the rochefort 10....westvleteren12 is no joke either.........hmmm.... aw f@#& it! i love them all!

I, too, love the Chimays, although my least favorite is the Cinq Cents (Wit). I brewed a Chimay clone that I call Charon (for Pluto's Moon of that name). It has been conditioning for 5 months and is QUITE tasty (9.7% ABV) In fact I (and the few people who I've let try it) think it is BETTER than the Grand Cru!!
I'm letting it age until Yule to see just HOW much better it will be!

So far, all I've had was the Blue. It was very nice. I look forward to trying the others.

is a triple the same as a wit? wit is a style of wheat beer right?
i never thought of triples that way but now that it's been brought up and i think about it i guess it could have wheat in it.....:confused: triples have every other flavor...

I don't care much for Chimay Blue. It always seems harsh and has a flavor in it that i don't like.Chimay Red is one of my favorite Beers and the White is also very good. The red is a great match for a rare steak and the white is nice with fish.

I visited Chimay back in the early 90s. We followed our noses and ended up at the monestary and took an unauthorized self guided tour of the grounds. Turns out that we had found the brewery but the actual visitor center was down the road a few miles. We were not supposed to be traipsing around the monestary peeking in windows. Of course that has never stopped me in the past. Needless to say we stopped in the town of Chimay for lunch and some brews but I never did get to the visitor center.

By all means, should you find a fresh shipment at your local importer, get at least two bottles of Chimay Grand Reserve, 750 ml or larger (blue lable).
Next, follow these very important instructions:
take one bottle and stand up (beer version of lay down, when dealing with corked bottles) in a cool, dark area of consistent temperature. Do not remove.
then, open other bottle and enjoy. Take notes. Put notes with stored bottle (see step one).
Three: after at least 5 years have passed, pop stored bottle on a special occasion. Enjoy.
Better yet, buy a case. Store. Sample one bottle per year until done. Enjoy.
With what I've sampled from Chimay over the last 3 years, these monks rock! I've been privileged to share in four bottles of CGR that were 7 years or older (one ten). Young is ok. Aged: remarkable.

they have the grand reserve magnum in stock at my local paint store but it's $25. trying to decide whether i want to cellar it (whether i even have room to cellar it) or not.

I bought a 750 bottle of Grande Réserve today, decided to drink it all tonight. Wow, thats a powerful beer, don't mess around. I enjoyed it a little too much, drinking too fast, realizing 'wow, i'm not just buzzed.' Gotta love it. Peace, HN-

Beersnob is correct, the CGR needs to rest.
I have 3 cases of the magnums, ('97), just sitting there and maturing.
We had a beer dinner at our place back in '02, and MBI brought in 2 bottles of the '94 that was laying down for 7 years...Totally a different beer.
A very mellow aroma, flavor, and overall mouth feel.
very velvety texture.
Oh yeah, by the way, BeerSnob, we're going to be having it on our re-opening of the "new" place.
Studentof beer: I paid $30 per magnum, and that was wholesale.
Marketing = how bad do you want it?????
