View Full Version : Finally know what to do with honey!

Last Tuesday I brewed a honey blond that, I think, is really going to be good. After the one hour boil, I removed the hops and added the honey (2.5 lbs. worth diluted with 1/2 gallon of water so the honey would not scorch), then boiled the honey into the wort for @ 5 min.

I tasted it this weekend after harvesting my yeast, and it is terrific. Has a very nice, but by no means overwhelming, honey note in the flavor.

I can't wait to bottle it next Thursday!!!

What was the complete recipe and what type of honey did you use? Sounds yummy.:D

Here ya go Obi...er.....Chris1Kanobi...hehe

Ray M's Honey Blond---

6 lbs. domestic pale 2 row malt
1 lb. domestic wheat malt
2 1/2 lbs. pure, fall honey
1 oz. Hallertau Hersbrucker hops (5 AAU)
White Labs Kolsch yeast (1/2 gal. starter made 3 days prior)
1 tsp. Irish Moss

Mash grains at 156* to 158* for 1 hour. Sparge as usual. Boil wort (with the hops) for 60 min. Add Irish Moss with 15 min. left in boil. At end of boil, remove hops, turn off heat, and add honey (which I diluted with @ 1/2 gallon spring water, so the honey wouldn't scorch). Bring mixture to boil and boil for 5 or 6 minutes to ensure mixture into the wort & sterilization. Cool, etc., etc.

When I added my yeast starter, it was already moving the airlock after 1 hour. OG was 1.055; FG was 1.007.

I get my honey from who I affectionately refer to as "the honey dude". He lives on the other side of town and has an apiary & everything. He said the honey was "fall" honey which he harvested in October, I think. It was jarred pure, straight from the hive. He gave me 3 jars total---I'm out now, so I have to pay him a visit again. The only thing he wanted in return was a couple bottles of any beer that I made with his honey. He's a cool dude:cool:

I don't mean to stray here but... Chris1Kanobi, that new pic of you is friggin hilarious! Stumped me at first but after the initial shock, knowing that is actually you, I cracked up! Now loosen your tie. :D
