Hello All:

I am new to the group, and looking forward to the experience. I am looking for a recipe for Blue Moon. My local brew shop set me up with the following, but I'd like to check it out with some of you to see how it compares.

All grain recipe - BLUE MOON
4.5 lbs. 2 row
3 lbs. Wheat
.5 lb. unmalted Wheat
1 oz. Bitter Orange Peel (by Brewer's Garden)
Wyeast #3944, Belgian Wit
1 oz Mitte frue hops 4.4
*** Mash at 155 for one hour, boil 1 hour, 1/2 oz hops at beginning of boil, 1/2 oz hops when 15 min remaining, orange peel when 15 min remaining.

If anyone has any recommendations, please let me know. I think the Blue Moon by Coors has corriander, but my local guy did not mention it (probably because he didn't have any available).

I would do anything to be able to make a beer comparable to Blue Moon, YUM!! :D

Thanks in advance,
O2 Mash

Welcome to the board.

Your yeast should give you the corriander flavor you are looking for. I'm not familiar with Blue Moon, so I cannot comment on the rest.

What OG are you hoping to hit?

Jughead:

Thank you for the reply, and thanks for the warm welcome. Interesting thought about the corriander in the yeast strain, I never considered that. Is it a known fact that this type of strain (Wyeast 3944) offers the taste of corriander? If so, great.

As far as the O.G. goes, I've never really been into the specific gravities too much. I don't even measure anymore :o

I never really knew how to alter them to obtain what I needed in the recipe. Maybe I need to learn a little more, I'll listen to any advice on this matter as well.

By the way, do yourself a favor, you GOTTA try Blue Moon!!!!
Thanks again,
O2 Mash

Welcome to the board.

Those Belgian yeasts are kinda freaky in the variety of flavors they give off.

It doesn't sound like it, but do you mean a beer by Blue Moon Brewing Co?

Yes, it is Blue Moon Brewing Company, located in Memphis, TN. They make a Belgian White beer. The company is owned and operate by Coors in Colorado.

Does anyone have any recipes for this beer?

I am also looking to make a Belgian White like blue moon. As said before if you havn't tried blue moon your missing out on an absolutley excellent beer. Its quickly become on of my favorite beers.

I have found a few recipies on the internet, but I wasn't sure how reliable they were. Please let us know how yours turns out O2 Mash. I'm very interested as I would love to attempt this myself.

I too was amused and a little impressed that a coors subsidiary would brew a belgian wit...and i must say seeing the floating goodies made me smile...I will advise you to not try their pumpkin ale next fall tempting as it may be. I sort of enjoyed the white so i decided to buy a whole case of the pumpkin ale and i am now stuck with a whole case minus 1 bottle the cinnamon and pumpkin flavors just arent there and the head is non existent flat mediocre attempt IMHO.....good luck w/ your quest and if you need coriander and cant find it look in the garden section of wally world for cilantro...the seed is coriander...i think id try crushing a little in the secondary.GL

Micah a good friend of mine some good experence brewing belgian wit. I will give him a call tonight and see what he knows. If nothing else I can give you some ratio's for how much corriander to add. Try and locate corriander at your local grocery store. Another addition you might consider would be the grain of paradise/alligator seed.

I will post as soon as I know.

BurritosandBeer:

Thanks for the recipe link. Looks a lot different than what I'm doing with mine (I don't have corriander or honey). I'll let you know how it turns out, my batch is still in the secondary and it's still rockin' and rollin'. Hope to keg it in a week or so.

I did a Blue Moon clone last summer. I kicked it up a bit gravity wise and it became more like a tripel (actually won 3rd place for that). But yes... corriander and orange peel - some in the boil and some in the 2ndary (it's not too late - just toss some in). Grind and toast the coriander before adding it. Use a mortar and pestle to crush it and then get a frying pan and lightly toast it (don't burn it) it brings out the flavors. I would suggest 2 vials of White Labs Belgian Wit yeast (WLP400) or their Belgian Wit II (WLP410). It does have a pretty nasty smell while fermenting - so be warned.

Thanks for the input. I'm going to head out of here and get some corriander for my secondary!! I really appreciate the tips, would you mind sharing your recipe? Sounds like a good one.

Sure... not a problem. I just don't have it here - so I shall post it later. The recipe I have is sort of a model for a commercial beer from a small city out here in the SF Bay Area. I gave one to the owner of the brewery - he liked it and tried to recreate it - so that made me feel pretty good.
