I bottled my very first batch. I'm more nervous now than when my wife was having our baby. I don't think I can wait two weeks to taste it.

Then, by all means, crack a couple open before they're "ready." That way, you can get a good feel and taste of what's happening during the conditioning stage.

We have all been through that giddy stage. It is a great feeling so don't forget it. Wait until you open that first one, you will swell with pride and so you should. I agree with tasting one or two. It will increase your knowledge of the process. Don't worry, having a couple early will not detract from the experience of opening the first one when it has carbonated.

Absolutly have one when ever you want...They are better with age, but it will give you a feeling for the next time! It's like making chili, you have to taste it till it's complete!!
