For me it's Wyeast 1968 - it gives a delicious malty taste with a very present but not over bearing sweet fruity taste. I have a fourth gen ESB kegged and it is superb. I may go two more generations and see what I get.
BTW - supposedly 1968 is Fuller's Yeast.

I'll go with WLP051 California Ale Yeast V. I have plans to try it in a recipe I am creating, which will be a sort of hybrid between an ale and a barleywine. What I'm shooting for is almost a session-style barleywine; something where you can drink a bunch of it, yet still enjoy excellent flavor. :)

I just brewed with White Labs Australian Ale....it left a really nice, clean malty flavor that I've been looking for for quite awhile. Too bad I didn't harvest it, but I will next time:)

Wyeast 1728 Scottish Ale. It ferments well in the mid 50's, and gives a nice malty clean flavor. It works great for stouts, porters, browns, and pretty much any malty beer.

wyeast 3068 Weihenstephan Weizen Yeast.
I am just experimenting with it, but i am on my second generation and love the smell of these little hungry children.

I really loved this yeast, too. Wonderful banana and cloves that you can dial in with temp.

After doing this Conniston Bluebird bitter clone, I must now change my favorite yeast to White Labs London Ale (WLP013). It does a great job of giving a beer that distinctive "English" flavor.

My favorite yet is the American Ale Wyeast. Although I prefer a very clean profile, let the malt and the hops do their work! Irish Ale by Wyeast is probably the best for stouts, but I don't much like it with less assertive malts.

Wow.
I also love the Ausie ale Yeast. I have it on slants and use it in many of my ales.
