View Full Version : How cold it too cold for lager?

I have a schwartzbier recipe that calls for primary fermentation at 38F for 2 weeks and secondary at 45F for 3-4 weeks. This seems awefully cold to me. I usually do my lagers at 45F (conveniently, the temperature of my spare fridge.) Has anyone fermented lager at that cold of a temperature?

It looks to me like the temps are reversed. Should be ferment at 45+ and lager at 38.

That's what I thought too Stodbrew. I think I will follow my "normal" fermentation process.

I have a czech pils that has spent it's whole life at 38 deg. :D

Some people lager there bottles as low as 30F. Just don't let it freeze!
