View Full Version : Sweet Beer

I just tried a bottle of beer I bottled 4 days ago. The carbonation was getting there, but the beer was still pretty sweet. I was just wondering if this is what "green" beer tastes like and if some of that sweetness will go away. I think a little more carbonation will help as well as just allowing the beer to age, I just couldn't wait 2 weeks to give it a try :)

What's the style of the beer? And what were the specs of the recipe?

It was one of the True Brew extract ingredient kits that my local homebrew supplier sells. The kit was for a Continental Light. I put a different kind of hops that was higher in alpha acids into it than what came with the kit. I brewed 5 gallons. OG was 1.036 and final gravity was 1.010. Let me know if you need more info to give me a diagnosis :)

After 4 days you probably still taste some of the sugar you used to carbonate your batch. I have yet to have a batch that is fully carbonated in less than 7 days. (Unless you are storing the beer at a high temp.) I would guess that in the next 6 days you would see a vast improvement on the taste.

I agree with mmmbeer. Give it some more time. Should be really good in another 7-10 days.

Tried the beer again. It is much better. The sweetness mellowed out and I can taste the hops a little now. It turned out pretty close to a cream ale. I gave some of it away to my friends and family. Maybe I can get my dad to quit drinking Busch :) I think my next batch is going to be a Scotch ale. I toured the Schlafly brewery in St. Louis this weekend and they had some awesome Scotch ale to sample afterwards. Now if I can just convince my wife that I NEED a fridge to turn into a kegerator...
