I've brewed three batches total.... my first is a lager (still in secondary) that I haven't bottled yet, but tasted good when I racked it.
The other two are a mild English style ale and an ice malt beverage clone.... I bottled the ale and one part of the ice drink (was in 2 separate carboys for experimentation) and they both tasted fine at racking from primary to secondary....
Now, upon bottling, it has a taste I can't quite describe.... it's like the alcohol is too strong - not quite vinegary, but maybe.... definitely has a bite to it.... the underlying tastes are still there - and still taste good.... but that sharp alcoholic bite overpowers it.
Let me mention that although I don't have the recipes, OG, FG, etc posted... there isn't too much alcohol.... one was a syrup kit made exactly to the directions, the other a recipe w/6lbs of ingredients..... anyhow - is this just the taste of a young beer?
