View Full Version : Much darker after 10 days in fermentor

I had not checked on my current brew for this past week and was surprised to see that it had become MUCH darker than it was when I first poured it into the carboy. The brew has been fermenting for 10 days and has a very rich and dark appearance. I was hoping for a darker brew and used 0.25 lb of Belgian chocolate malt, (along with a couple of other malts), in the steep before adding the amber extract. I was disappointed in the reddish brown color at first....but am now pleased that the brew has taken on this darker color.

Do some brews take on a richer, darker color as they ferment?

Now that your fermentation is done, the yeast has all settled out, giving the beer a darker color. During fermentation, with the yeast in suspension, it will make the beer appear lighter in color. Also, you're looking at 5 gallons of beer, so not a lot of light can get through that volume of beer, so it might not be quite as dark as you think. It might look a bit lighter in a pint glass.
