Could I do my mashing on Saturday, collect my wort in a bucket, and then brew on Sunday? This five hour brew day thing is killin me! I wanted to brew on Saturday so I would have Sunday to recover, but the weather is not cooperating. I have brewed on Sunday for the last couple of weeks and it makes for a rough Monday at work.

I've split across two days(when things came up that interrupted my brewing) with no noticeable ill effects.

Give it a shot TC. I've heard of others doing this and i don't see why it wouldn't work, as long as you keep your mashed wort cool and covered in the meantime. I think I'm going to try this soon, as I also have trouble with those late-night brew sessions on Sundays.

I don't do AG yet but can't leaving it overnight create a sour mash.
I know you want to after you lauter but didn't know if it could still sour since it wasn't boiled yet. Just kinda popped in my head so I threw it out there. You and others would know more than me. Like I said, I haven't move on to this step of brewing yet. Maybe my next one though. I have everything I need.

Yeah - it absolutely could if sufficient amounts of lacto are present and act quickly enough. I've never had it happen but it definitely could.
