View Full Version : All-grain with 100% enzymeless malt?

I noticed on the shelf of my favorite homebrew store a bottle of amylase. It's meant to clear the starch haze from beer, and convert it into sugar. I was wondering if you could take an enzymeless malt, like biscuit malt, add the amylase powder, and mash it? Has anyone done this?

Some enzymes need to be present in order for the conversion to take place. Many breweries use enzyme inhancers like Papain to make low carb beers. Some brewers are also experimenting with Beano (amyloglucosidase) to get the same, more fermentable, less carbs. result.

If you brewed with biscuit only, you would get an unbelievable tasting brew (not in a good way).

Modern 2-row has so much enzyme power that you could probably convert carboard if you threw it in there.

Keep it simple, let the macrobreweres mess around with the enzymes. We'll brew and drink the good stuff.
