Hey just wanted to post this recipe I got of of CYBI. 14#'s 2row 1# Caramalt 1#munich malt 1#c45 amd 2oz.pale chocolate malt .75 oz. Northern Brewer 80min(it's a 90 min. boil)and 4 oz.of Columbus 10min. Dryhop with 2 oz. amirillo.Was wondering since I don't have 2row will pilsner be a okay substitute.:(

Saw your other thread first sorry. Since it's what you have on hand, I'd doubt that it would be much different. Although I think they recommend a rest with pilsner which I've always skipped when I've used it because I'm lazy and mainly impatient if I don't KNOW there will be a benefit.

Yeah I've never done a rest with pilsner malt and never noticed a difference.Like I said I was always sweeter in the beginning than the sweetness would fade to just malty beer? I don't Know if that makes sense but I'm drinking an all pilsner hoppy amber ale right now:D

I think you'd have to malt your own barley to get a base malt that's not pretty thoroughly modified now. For my lagers I buy Weyermann Bohemian Pils by the 25 kilo sack, and it only gets a sacc. rest. I only do protein rests now when I've got a beer with half or better wheat malt or any significant amount of oats or rye just because I hate stuck lauters. Oh, and every few years when I actually think I have the time I'll do a decoction mash, which pretty much by definition has to have a protein rest somewhere in the process.
