View Full Version : Cooper's dry ale yeast.

Has anyone here used Cooper's dry ale yeast? What are your opinions of it? I've read about it on a few sites, and some say it has "very fruity characteristics" and others say it "has a clean, rounded flavour profile comparable to commercial beers" So which is it? How can it be "clean" and estery at the same time? I've never used this yeast before, but I plan to(I have a few packs in the fridge) and I just want to know what to expect.

I have used it a lot of times and it is my favourite dry yeast. I still use it for a raspberry honey ale that I make.

BYO describes it as having “Clean, round flavor profile”. This is the result I got from it.

As to it being clean and yet estery, this is partially dependant on your fermentation temperature. The warmer the fermentation the more fruity it will come out. It’s temperature range is 70-80*F. I use it at the low end (about 72*F).

its a good yeast. my neighbor and brew buddy did a little comparison between it and 3 liquid strains. We both rated the coopers in the middle of the pack. The beer was a red ale or something like that.

I've used Coopers and Munton's dry ale yeast and found coopers to be more attenuative and give a more complete ferment. It's temp range is a little higher than some yeasts (70-80F) so it gives some extra esters. Munton's (the other dry yeast I've used) leaves a more malty brew (less attenuative) but flocculates a bit faster (giving clearer beer). I don't know its temp range off hand, but it is a few degrees lower than coopers (I think 76 is the top end for muntons) so fermenting it its range produces slightly less esters.
