Just kegged my first attempt at a scottish ale after 3 weeks in primary. Grav went from 1.05 to 1.014 so evidently the yeast (WLP0238) were happy and did their job. The sample I tasted however seemed to have a suggestion of apple cider... not dominant but subtle. It still needs several weeks of conditioning, but I was wondering if this is an aberration and, if so, what may have caused it? Ferm temp fluctuated in the 64 to 70 range in primary.

What yeast was it cause i know that Wyeast 1728 scottish ale tends to give off a cidery flavor if the fementation is not complete. It happen to me with one of my scottish ales, it threw out alot of diacital and never cleaned it up because the starter was not big enough and the yeast just quit on me. I would just let it condition in the keg alittle longer. HTH

Tnx 4 reply, Moots. I used the WLP028, which is their equivalent of the Wyeast 1728, so perhaps that explains the subtle cider suggestion. On my original post, my fat fingers hit too many keys for the yeast number, as I see now. I suspect tincture of time will smooth out all the wrinkles. Was thinking of tapping into this one for Tnxgvg.

I say tap it. I had an old ale on cask from Belhaven at NERAX and it tasted just like my cidery scotch ale.

If anybody complains tell them that's exactly what it's supposed to taste like and rename it to suit the flavor. I do it all the time.

Here is an idea, Make a simple Small batch of hard cider, say 2 gallons cider,a lb of light brown sugar and some yeast nutrient and blend it with the batch and call it Scottish Hard Cider!
