My next beer requires a mini mash. To break the brew day up so I don't need a 4 hour chunck (which is often a big deal with 2 little kids running amok). Is it OK to steep grains one night, refrigerate them overnight, and use them the next night for brewing? Will this do something to the sugars?
I realize, this isn't necessarily a time saver in the long run, but it does help by removing some steps on brew day.

It is possible, though I question whether you'll save a lot of brewing time on second day, since if you're starting the mash that day, you can heat the water at full blaze and not worry about scorching, but if you have to reheat a converted mash, you'll need to hover over it, constantly stirring to keep it from scorching.
