View Full Version : Where To Ferment Once Bottled?

Once you bottle, where do you usually put the beer to ferment in the bottles? Is the fridge the best place, garage or... The reason I ask is that my fridge may not be able to hold everything. I've got 48 bottles to hold. What temp does it have to be etc. Any feedback is greatly appreciated.

I use a closet that has a constant temp in the 65-70 degree range. You should keep it in a similar range until it carbonates.

As SFB said it needs to stay in the yeasts ferment range until its done carbonating. Your fridge would be too cold for this.

So you don't want it to be as cold as a fridge while it finishes fermenting in the bottle? I didn't know that. I thought once it was bottled you put it in the fridge.

If you put it straight into the fridge after bottling the yeast will go dormant and not do their job of carbonating.

Room temp (67-70) for 2 weeks to hasten carbonation.
After that, the cellar, where it rarely gets above 60.

I agree with the 60+ temps for the first several weeks until carbonation has occurred. But you don't have to worry too much after that if you don't have a cold cellar. I don't and have had no problems with keeping my beer in the corner of the room where it is relitively constant in terms of room temperature. It does not fluctuate much on a day by day basis but does season by season, that is to say it does get up to 80 when the whole house does but doesn't swing on a daily basis. I've had no problems storing it there.
