Hey all,

Spoke to my local homebrew experts the other day regarding ways to clarify my beer. I do not keg, as I still do not have a kegerator system. One of the guys stated I should transfer to a secondary fermentor (carboy) and then pop it into a fridge or freezer to help everything settle.

My question is this... would doing this kill the yeast (I'm thinking the answer is yes) and then, if it kills the yeast, how can I carbonate my beer? Priming sugar reacts with the yeast... right? So what's the alternative to sugar for carbonating??

It will make most of them drop out of suspension but there should still be enough to carbonate your beer. If you're worried, you can always add 1/2 packet of dry yeast when you bottle.

prime, and bottle as usual. let it sit at cellar to room temperature, or whatever preference you have to finish the carbonation. When this is done, put it in the fridge and let it age for a week. you will notice a remarkable difference in clarity in this short while.
My last wheat ale was very cloudy. I drank it in a couple of days (rough week) except one that was hidden in the back of the fridge. 3 months later when when I finally poured it out it was pristine, clear, and sparkling.
