This is probably a dumb question...I've seen a lot of people talking about using lager yeasts at just below room temperature (~65 degrees). How do you go about fermenting something just barely below room temperature? Just put it in a cool spot? Turn down the thermostat? I'm eager to try this out, just confused on temperature regulators. Thanks

There are the ways you listed, plus there are ice baths, wrapping the carboy in a wet shirt and sitting it in a pail of water to cool the carboy via evaporation. Anything that drops the temperature consistently will work.
the shed does it for me. guess it depends on the weather where you live

Yeah, it does... it was 75 here in Nashville last week!
Two nights ago it was down to 7... this is starting to remind me of home! Coloradoans are famous for saying, "If you don't like the weather here.... wait a few minutes!" :D

In the summer here, sometimes the LOW is 90! It actually feels hotter at night than it does in the day sometimes... I think it's the humidity.
