How much lactose should I add to a 5 gal. Irish Stout kit to make it a sweet stout? Half pound? One pound? I'm steeping grain right now, and I can't remember what the guy said at the brew shop. Help! I'm fretting again! ;)

Recipes I have seen have called for around 2 to 3 ounces. I have never addded this stuff myself so I couldnt say for sure. !lb in 5 gallons seems like a ton to me, its an unfermentable sweetner so I would go more conservative.

I dunno, the St. Pat's Milk Stout recipe calls for one pound lactose at bottling, not during the boil. What did you end up doing?

Northern Brewer's (http://www.northernbrewer.com/alekits.html) sweet stout kit uses one pound of lactose. it's very tasty, I added it (and all the fermentables) with about 5 minutes left in the boil time...

Well I hope I didnt steer yuo too wrong Fret.
Being that the lactose is nonfermentable there should be no problem with just boiling a little up and adding it after ferment right? What do you guys think about that?

I added about 4 oz. at the beginning of the boil so far. It's fermenting right now, and if I think I need to I guess I can add some later on, right? My SG (I remembered this time!) was 1.060, and I tasted the beer I used for that and it was SWEET...... I hope not too sweet. We'll see....

I think that would be fine. As a matter of fact, I have boiled and added it to a batch at kegging. Worked just fine.

So I'm looking at the January-February BYO for the batch sparging article mentioned over in the all-grain thread when I see that the article before that is on Milk Stouts... They have several recipes that all call for one half to one pound of lactose. So, yeah, I would probably try to add the rest of the lactose, if possible, or at least enough to get a half pound in.

So, if I add another 4 oz. between primary and secondary, I'd be in good shape? OR maybe a little more....?
