View Full Version : Arrogant Bastard clone (all grain)?

I'm looking to break in my new all grain setup, and figured that an Arrogant Bastard clone would be a good first try. After searching online quite a bit, all i really see is extract recipies or grain bills without specific mashing instructions. here's what i've come up with:
(5 gallons, all-grain)
11.5 lbs two-row malt
1.5 lbs crystal 120
2.75 oz chinook hops (divided within 3 stages of boil)
1tsp Irish moss
White Labs WLP007 or WLP001 (English Ale Yeast)
All i've been able to find as far as directions go is that the grains should rest at 155 deg F for 30 min. Any tips on sparging temp or anything else would be much appreciated! wish me luck on my first all grain attempt!

I would mash at around 153*F for an hour. No higher than 155*, though. As far as sparging, 170* is optimal. That way you stop all alpha amylase enzyme activity.

Although I don't brew all-grain, you can tell when your mash is done by taking a drop of liquid from the mash and adding a drop of iodine. If it stays amber, you're done. If it turns purple, you need to let it go longer. You might want to try to get some Iodophor, which will do double duty as one of the best possible sanitizers for your equipment. (It can stain things, though!)

I agree with Stodbrew definitely use a low mash temp - I would maybe even go as low as 150 or 151F. You're looking to have a nicely fermentable wort for AB.

1.0 oz chinook pellets (12.5 AAUs) @ 30 min
0.5 oz chinook pellets (6.25 AAUs) @ flame out
1 tsp Irish moss
White Labs WLP007 or WLP001 (English Ale Yeast)
Preparation Place crushed grains in water and steep at 155 degrees for 60 minutes. Boil for 90 minutes, adding the hops according to schedule. Add Irish Moss last 5 minutes of the boil. Cool wort and pitch yeast. Primary ferment at about 68 F for 7 to 10 days. Secondary fermentation optional.
Specifics Style Strong Ale Recipe Type All Grain Batch Size 5 gallons Original Gravity 1.074 Final Gravity 1.018 Boiling Time 90 minutes Primary Fermentation Glass, ~ 68 F, 7-10 days Secondary Fermentation optional Other Specifics 75 IBUs, about 7% abv.
Comments Aging will mellow the Bastard so drink it young if you want to prove your worth.
This recipe was compiled from various sources of AB clones.
I Have made this recipe about 5 times now. It is definately one of my favorites. I converted the recipe to extract/specialty grain recipe by using 8.6 pounds of LME. Drinking this brew very young will give you a close taste of AB but after about 3 weeks it blends to an excellent brown ale that is very tasty. My friend an I drink this beer alot. I'd highly recommend using this recipe!!!

Hey Rocket. Give this a try.
9 lb. Amber dry malt extract
1 lb. 8 oz. American crystal 120L
1.5 oz. Chinook (12% AA, 60 min.)
1 oz. Chinook (12% AA, 30 min.)
.5 oz. Chinook (aroma)
OG: 1.077 FG: 1.018
I took the AG recipe and plugged some numbers into the Recipator and voila. I don't know if it would be an exact, or even similar, clone but it is a start.

Hey, I'm just the messenger.
I do find it interesting that I come across various takes on a given clone recipe that are just so completely different. One person says that the Homebrews Adventure one is dead on. Another has told me that the first recipe above is damn near it. And they are totally different. Hmm.

I'm only talking about the recipe - not you. My opinion is purely for anyone looking at the recipe. And it is just my opinion....
The first recipe is in the fermenter right now....maybe I'll brew the second one and compare.

i brewed the extract version from HBA yesterday, because i couldn't wait for the weather to perk up enough for all-grain.
in a few weeks i'll have both recipies side-by-side for comparison.

The thing is I've brewed with centennial many times and it doesn't have the same nose or flavor as chinook. Maybe the recipe makes more of a difference than I'm giving it credit for....
Everybody brew them both and we'll have a poll about which one is closer to AB.

I'm going to try at least one of these recipes but I live close by Stone and will soon have another corny of AB on tap!!! Something tells me my version won't be an exact copy!

Well - mine is starting to come around but it's still a little rough around the edges. My choice of yeast made a big difference(I knew it would) - it's more like if Arrogant Bastard were brewed by Fullers.
I guess next time I'll try using a yeast that's more appropriate.

OK - I brewed the Homebrew Adventures AB clone yesterday and the smell today is unmistakeably close to the real Arrogant Bastard.
I'll post back more as this progresses.

The homebrew adventures version of Arrogant Bastard has turned out to be very close. I recommend it to anyone that likes AB.

Cool; this is up in my rotation and I've been going back and forth on which to make. Think I'll give teh HBA version a try first.
