I've got Lallemand/Danstar yeast for this batch. I am currently boiling my wort and need to know if I need to proof this yeast? In reading John Palmer's guide, it says:
Lallemand/Danstar does not recommend proofing after rehydration of their yeast because they have optimized their yeast's nutrional reserves for quick starting in the main wort. Proofing expends some of those reserves.

Is this correct? Please help asap so I can begin rehydrating.

I have never proofed my yeast. Relax, Dont worry.

Remember this is rocket science, its brain surgery!!!:D

I have never rehydrated or proofed my dry yeast. I just bring the wort to 80 degrees and pour it in. Always had minimal lag time also. Only yeast prep I ever do is starters when doing high gravity brews and ofcourse WYeast smack packs a day before boil.

Well, I rehydrated the yeast. Was that a bad idea?
