I am brewing a California Common which is a high-temp fermenting lager. Basically it is an ale with lager characteristics (which is what I'm told...) This is my first CC.
It is an Anchor Steam clone. Primary fermented at 70 degrees for one week and I just racked to secondary and all seems well. Secondary gravity is 1.010. Can I move the secondary to 65 degrees and how long should I leave it there before bottling and also, how long in the bottle. I don't wnat to rush it.
