View Full Version : Adding Honey & Molasses

I am going to be brewing an extract & grain Honey Porter (a clone of Sam Adam's) this weekend. It's the first time that I will be adding anything but malt extract to the boil. The recipe calls for adding the 3 lb dark DME, 1 lb molasses and 1 pint honey to the 1 1/2 gallons of water after steeping the grains.

That seems like a lot of fermentables in a little water. I recall reading that it might be better to split the malt extract and keep 1/2 or so out until the last 10 - 15 minutes of the boil.

I'm thinking for one, that I might bring the water up to 3 gallons after steeping for the full boil.

What are some of the prevailing thoughts about adding all the malt extract and or the honey and molasses?

Personally, i would add both the molasses and honey AFTER the boil, at flame out, that way you don't boil off the aroma's But i agree 3 gallons seems a better boil volume.
