Any ideas on an all grain cherry vanilla stout or porter maybe? I was thinking of making it pretty strong around 7-8%.

You know, that's really creepy - I was thinking of doing a cherry vanilla stout with cherries I picked up at a good price this summer, but I'm not averse to a porter either. Whoever comes up with the all grain recipe - if I'm not asking too much, can you post a similar extract-with-grains one? :-)

I'm doing a very simple vanilla porter next month:

8.5 lbs 2-row
1 lb caramunich
.5 lb chocolate
magnum at 60 minutes (enough for about 25-30 IBUs)
3 vanilla beans added at end of fermentation

How do u sanitize the vanilla beans? Maybe in some Jack Daniels,or makers mark.

Vodka is more neutral, but you may like the hint of a bourbon or whiskey...maybe even rum.

If I want to add a bit more orange flavor in my wit during secondary, I'll sanitize bitter orange peel in a little orange liqueur.

When u say neutral u mean it dosent come through at all.

The small amount of vodka you would need to sanitize a couple of vanilla beans wouldn't be detectable in a 5 gallon batch. In a stout or porter you probably wouldn't notice most liquors...again, in the small amount you need to sanitize a few beans.

In the past, I soak the beans in alcohol of some sort, depends on my mood. This time, I might just toss them in without soaking first. We'll see.

Will that be ok not to sterilize them before u put them in. What about fruit purees?

It would probably be best to soak them in alcohol first.

The oregon fruit purees can just be added, they are already pasteurized.

Fresh fruit should be pasturized....bring it up to 160 and hold for about 5 minutes
