View Full Version : Has anyone ever made anything like this?

i have been reading a book called the big book o beer, and i came across a recipe in it for George Washington's "small beer" so it seems are first president of the United States was a home brewer and i am wanting to try this beer BUT the recipie is very old (i know DUH right lol) and i am not sure how to translate it to current standards. it would appear that the recipe is for a 30 gallon batch so i also need to scale it back to 5 gallons. Any ideas? So here it is:

1 large siffer full of bran hops

3 Gallns Molasses

1 quart yeast

for 5 gallons, all you have to do is find exactly 1/6 of one large siffer full of bran hops.

I've had beers with molasses in them, and find them to be dominated by the molasses, atrocious in my opinion.

I think I saw a 1/6 large siffer on craigslist last week in Portland..., or was it Topeka? Sheboygin...Definitely in Sheboygin. Probably gone by now.


Just kidding, I don't know what a siffer is, or even bran hops for that matter. Good luck to you.

I think it depends a lot on the molasses and how much you use. Don't think I'd ever consider using blackstrap. Went with 30lbs of a tasty variety on Thursday, will be very interested how it turns out.

Me and a dozen other homebrewers got to design a recipe, and then we brewed it last week at Sierra Nevada.

This was my prize for winning a gold medal at the NHC. For those who think competitions are a waste of time, I enthusiastically beg to differ.

Congrats again, Mark.

Jake from Buffalo is a friend of mine. Sounded like you guys did a community brew of epic proportions! (How many emails?????) He spoke about it on the BN Sunday Session show this week.

He said that the earlier group's Stock Ale was pretty tasty after only 7 days.... (Gordon Strong was in that group and he spoke about that in the same episode). What did you think? 7 days for a Stock Ale? I know that in large quantities, the yeast run rampant, but 7 days down from 8.5% to green but drinkable?

The Stock Ale was yeasty and at fermentation temp, but it's going to be great. I was absolutely shocked when they told me the gravity and alcohol specs, it was way too smooth... lots to be said for pitching lots of healthy yeast and controlled fermentation temps.

I had a great time meeting Jake, his brother, and all the other homebrewers. Learned a lot, and had a great time.

Forgive my ignorance, but I thought Stock Ale was acidic and used for blending to give Old Ales aging qualities without spending the time to get it?

Mark, just curious, is the Baltic Porter you guys brewed something that SN is going to distribute locally? I have a buddy out there that might be able to snag me some if it is.

It will be a limited, draft-only release, so it will show up in small amounts around the country at various pubs. The SN restaurant will likely have it available at some point (when I was there, they had a cask of Beer Camp beer called Edge of Darkness, a big hoppy brown ale).
