Today, gents, I finally embarked on my Cherry Ale journey. Made a 1/2 gallon starter with some White Labs Australian Ale yeast. Expiration date was 10/30/03. This is the first time I bought an expired tube o' yea't. There was a White Labs European Ale vial that expires in '04, but I have never liked the flavor profile that it yields in the 2 batches that I previously made with that strain.
The Australian Ale is a new one for me, so I'll tell you guys how it turns out. I made the starter @ 5 p.m. At 2 a.m., the little swirls of wispies on top of the wort are signalling to me the embryonic stages of fermentation---I hope. Man, I haven't brewed since August! I'm going through withdrawal!! Anyway, I brew Monday morning, trying out my new turkey fryer from Sam's.
