I got Sacred and herbal healing beers book for Fathers day(my woman rocks) and i noticed in it Millet Beer, which i thought sounded interesting, my question is, i can not find millet that is malted, and i refuse to do what the book says(saliva in beer just grosses me out so i aint spitting on my grain in anyway) Would Amylase enzyme work to convert the starch if it was crushed,boiled and had amylase added after it cooled? If not how would i process it to make beer without using saliva?

I think amalayse would work, but I am not really sure. Not even sure what kind of starch is in millet (if any).
You could try some enzymatic malt extract (can't recall the brand or name), or just use a pound or two of 2 row pale to provide enzymes.

Does the recipe call for malted millet? Give us details on the recipe so we can help
