I noticed a problem while brewing last week...
The boiling pot I have been using is a turkey fryer, its an off shaped one with a lip at the top that helps hold it on its stand

Hopefully that quick drawing helps, its harder to do than you'd think
Anyway the wort boiled up and the hops clung to the ledge and the wall about the lip, now Im just thinking that it wont be at all bitter since a lot of the hops weren't actually in the wort during probably half of the boil.
How big of a deal is that and if I wanted to up the bitterness would dry hopping be an ok substitute? it was 1 3/4 oz of willamette pellets what would I need to dry hop with to make up for it about?

1. Next time, stir the hops back in regularly during the boil.
2. Dry hopping will not give you much bitterness. I suggest getting some isohop extract and slowly adding that until you like the results:

I've gone to using the rather loose and coarse mesh nylon brewing bags I get from Midway for hops. They work great, the hops aren't compacted in the bag and it sinks into the wort quickly and stays there during the boil. I first tried using the muslin grain bags, but with hops, they float all over the place and get tangled in my stir paddle. The nylon bags do not. They also rinse easily for another boil.

best hop bag is a nylon paint strainer....get them from any hardware store/paint store.... I use the 5 gallon bag size

how well do the hop bags hold up to the boiling temps?

They work great for us at any boil temps.
We tie the string to the handle of the pot and let it float....:D

I wouldnt want it laying on the bottom of the pot...... I know some people take them and make a collar out of PVC and then suspend it across the top of the kettle with some smaller CPVC or a couple threaded rods.... lets it more or less float around in the kettle and makes it easy to just dump the hops into the collar as its held open all the time.....
Me I dont use a hopsock I throw my hops in and let them do their thing..... THOUGH last batch I took a 5 gallon paint strainer and had it soaking in sanitizer... Then after the boil I chilled the wort down with my IC then pulled the IC and put it INSIDE the strainer bag then put it back into the kettle and racked from the middle of the the IC, the bag makes a HELL of a filter!!!! The trub and hops left in the bottom of the kettle was more or less just a compacted damp cake....... ended up with about 1/4 gallon more wort into the fermentor without ANY work LOL.... after a few gallons I just tiped my kettle a bit to one side and kept on going..
Sure beats the HELL out of doing the funnel with the filter in it and a spoon to try to get the last bit of wort out.... I will never brew without one again!!!!

I've gotten pretty good with the dip tube and a chore boy, but a heavy hop load is truly a pain in the butt to deal with--espicially when it plugs up my shirron, which is why I was thinking that a nylon bag might help out.....

the nylone bag would definatly help if you want a can lookup a few pics and put them on my photobucket and you can see what some peeps are doing with them.... pretty smart really

Looks like a safe-t-fryer by the drawing, hop bags are the way to go with this rig.

As the hops sticks to the top of the boil kettle I use the spoon to scoop it back into the wort. I use pellets so I'm not sure if a bag would work or not. I don't mind using the spoon method. I like watching the boil anyway. It smells really good and sometimes I can stir it before it overflows. Sometimes I spill the beer I am drinking while I am trying to stir the beer I am brewing. If beer is good for concrete then my garage will last forever...
