View Full Version : Need new recipe for left overs

Before I go out and restock the grain barrels I would like to make a bastard brew with what I have. I know the quantity of base grains are wrong according to beer smith but I know there's at least 30lbs combined.
I'm not real crazy about IPA's but malty Ale's and Porters I love. Would appreciate any input for an all grain 10gal. recipe that will not mean a trip to the store.
My other goal is to rid myself of the many small amounts of hops I have left.
Figure most are at least a year old.

carapils 4.8oz
caravienne malt 5.8oz
chocolate malt 7.2oz
maris otter 28lbs ??
munch malt 2lbs 3oz
pale malt 2row 8lbs ??
flaked oats 4.8oz
pilsen 5lbs ??
special roast 3lbs 12oz
white wheat malt 3lbs

fuggles .5oz
cascade 2.0oz
cluster .5oz
hallertauer hersbrucker .5oz
mt. hood 7.0oz
pearle .75oz
sturian goldings .25oz
target .75oz
willamette 1.75oz

european ale WLP011 2 Viles
belgian style ale yeast WLP575

20 pounds of Maris Otter
all the Munich Munich
2.5 pounds pale malt
3 pounds wheat malt
1 pound crystal 60
all the chocolate
The hops are going to be tougher:
3 oz Mt Hood 60 min
All the Willamette, Fuggles, and Styrian Goldings(all 3 are basically Fuggles I think) for 20 mins
the hallertau and Pearle at flameout
The WLP 011(make a good starter)
Save the pilsen malt, caravienne and flaked oats for a small Belgian Golden Ale.

I would make a blonde/wheat ale first:

munch malt 2lbs 3oz
pilsen 5lbs
pale malt 2row 8lbs
white wheat malt 3lbs
flaked oats 4.8oz

60 minute addition
cluster .5oz
hallertauer hersbrucker .5oz
mt. hood 1oz

20 minute addition
mt hood 2oz

0 minute addition
mt hood 2oz

european ale WLP011 2 Viles (make a 1 gallon starter if possible)



Then reuse the yeast to make an Old Ale:

maris otter 28lbs
crystal 60l 1lb
carapils 4.8oz
caravienne malt 5.8oz
chocolate malt 7.2oz
special roast 2lbs

60 minute addition
target .75oz
pearle .75oz
cascade 2.0oz
mt hood 2oz
fuggles .5oz

0 minute addition
sturian goldings .25oz
willamette 1.75oz

This will use up everything except the belgian yeast and 1.75 lbs of special roast.

Sorry for not getting back to thank you guy's sooner but its been one of those weeks.
Brewing tomorrow and I don't know which I'll do until the moment comes.
Have both villes of the european yeast going in a 2lt. starter.
Pipeline consists of 11 empty cornies!:(
