View Full Version : Heavy Stout partial mash wanted

I am looking for a partial mash recipe for a heavy stout. I am thinking along the lines of an oatmeal stout. I am looking for something really creamy, mouthfeel is the big thing here. Of course, great flavor is important too. I also plan on adding vanilla beans to this for a little kick of vanilla. A vanilla oatmeal stout with a lot of mouthfeel. Surely one of you experienced brewers has the recipe I need.

I have been eating Quaker Oats French Vanilla instant oatmeal this week. Gave me the idea.

How many vanilla beans are you thinking about using? My experience with them is they have performed less then stellar. I have used Madigascar beans in some of the brews and not had the desired results. Using a pure extract post fermentation has been giving the desired results and you can add them (titrate) as you go to make sure that you achieve the desired flavor/aroma. I was concerned at first about the harsh flavor the extract might give but was suprised that it not only did not do that, it also did not disipate over time like the beans had done. Just some thoughts.

A vanilla cream ale just won a blue ribbon in the Spice/Herb/Vegetable beer category in our competition. Very smooth and tasty. Not overbearing but detectable in taste and aroma.

I have considered the extract before bottling. I was thinking along the lines of 4-6 beans, added to the secondary.
