Keeping a brewpub and barbecue business afloat in tough economic times is a challenging task for anyone, even the dedicated brother-sister team of Bret and Stephanie Dodd.
The Olympia High School graduates sank their life savings; a lot of sweat equity; and a passion for making good beer and smoked barbecue beef, pork and chicken into the business they opened in 2006.
I'm talking about Speedway Brewing Co. and its barbecue restaurant, a converted warehouse at 1225 Ruddell Road in Lacey that gets its name and much of its decor from Bret's years as a race car videographer for ESPN and other networks.
To make it through the economic recession, the Dodds have had to cut back on help; eliminate their Tuesday-through-Thursday lunch hours and develop plans in 2009 to add more televisions, put a couple of domestic beers on tap and secure a Class H liquor license.
"You have to stay flexible and give the customers what they want," said Bret Dodd, 45. "Our mantra here is: Nobody leaves hungry."
Bret Dodd came to work last Sunday morning and knew right away that something was amiss. Just inside the door, a glass display of model race cars was lying on the floor.
