View Full Version : Dunkelweiss lager?

I've got 10 gallons of Pilsner sitting in my conical doing a diacetyl rest right now at 62F. Tomorrow or Tuesday it goes to kegs for extended lagering and I want to use the yeast cake for a big(definitely not to style) dunkel weiss. I'm really not very experienced with brewing anything German except bocks so forgive my ignorance. I think but I'm not sure that dunkel weiss is normally brewed with an ale yeast but has anybody done it with a lager yeast? I used White Labs WLP 830 for my Pilsner BTW.

I make my Weizenbock with that yeast. Do you have the "Brewing Classic Styles"? I know your not trying to go to style, but it can give you some direction and input.

I have the Bock book, but it's only reference was that Weizenbocks were discussed fully in the Wheat Beers book, which of course I don't have. And I think I left Designing Great Beers at work so here I am on the Internets trying to get by with a little help from my friends:D .

Corky, I just went through the weizen section of Desiging Great Beers and all the yeasts are ale yeasts. Hope I didn't ruin your plans.

Great book, BTW.

Thanks. It won't ruin my plans but I'll probably brew something else with that yeast cake. I brewed 15 gallons of that pilsner so I have 5 gallons in a separate bucket. I'll probably do a dunkelweiss lager in the bucket just for grins, and maybe just a normal dunkel in the conical.
