oops, wrong forum.
looking for a pot for brewing. the one i have is a 30 qt stainless steel one that is sort of adequate. it is thin on the bottom and tends to make scorch, even with my pathetic old antique propane burner.
i'm thinking of finding a thick plate of metal to set the pot on over the burner to even the heat out.
but i was at macy's today and saw a 20 qt "martha stewart" brand SS pot with lid and bottom that was about 3/8" thick, on sale for $60. i think it would be fine for the extract brewing that i'm doing now that only needs 2 gallons in the boil. but i'm wondering if it is big enough for more advanced methods like all grain.

No. It's too small for all grain unless you're brewing 3 gallon batches. Your 30 quart is about minimum size for full wort boils, extract or all grain.
Full wort boils will be the easiest thing you can do to improve your extract brewing. And a thick plate will not transmit enough heat, you ned some sort of high temp perforated plate.

further research showed me the keggle. 15 gallon converted beer keg. i have the tools and i should be able to get an old keg for $30 or so. maybe get two and cut one down to ten gallons.

I have 4 of them-a mash tun, hot liquor tank, kettle, and one for cooking up to 60 pounds of bratwurst in beer. Don't cut them down, you can always use the extra space.

y'know, for cooking a lot of brats you should find one of the old cast iron bath tubs. set up three burners underneath and let it go.

Yeah, that idea reminds me a little too much of the Seinfeld episode where Kramer decided to save water and just dice up veggies while in the shower before serving them up at a dinner party. Boiling helps some but...why?

The only reasons I know of why you boil are to condense the wort and extract resins from hops. Well, I guess it also sanitizes the wort.
