I'm looking for a clone recipe for Chimay White. The steeping grains are the main thing I'm concerned about getting right. I am pretty sure that Belgian aromatic malt needs to be in there.

As for hops, I was thinking of using a euro variety to get around 30 IBUs. Any ideas on a specific variety?

Yeast should be easy: Wyeast 1214 or White Labs 500

Boosting the gravity will be easy too: add 1.5 lb of Belgian candy sugar 2 days into primary fermentation.

IF you can find them, Styrian Goldings are the preferred hops for the style. As a substitute, you might use Perle, Liberty, or even Santiam. I believe Spalt or Sterling would also work. In truth, Styrian Goldings is related to Fuggles, and of course Goldings, so any of the Fuggle or Goldings family should work, although I believe my earlier suggestions to be better suited.

Your yeast choice is good. WLP 530 would also work.

From the suggested recipe, I would substitute liquid Belgian Candi sugar for the listed "1.5 # sugar."
