I am going to brew a Scotch ale tomorrow. Got all the ingredients together and will start bright and early in the morning. Early being 9 or 10. This will be an all original brew for me. Got a big boost in confidence from the other one I concocted so I thought I would try it again. I am shoting for an OG of around 1.078. and a FG of 1.02 or 1.018. Should give me an ABV in the 7.5% range.

SFB - the one suggestion I have about a Scotch Ale is to be careful about your ferm temp. If you have the means - keep it at the middle to low end of the temp for the yeast. I had a Scothc Ale over attenuate(down to like 1.008 from something like 1.090) and it loses some of the malty character that you'd like for it to retain.

Damn! Had to put this on hold until tomorrow. I got up this morning to find my wife left me a honey-do list as long as my arm. Here it is mid day and I am only half done with it. Oh well. Guess it is up early again tomorrow.
Thanks for the tips kevin and Eddy. I will keep the temp down. The brew closet, also known as the pantry, stays a constant 64 degrees in the winter.
