View Full Version : California Common fermentation temp?

Hello everyone! I am a homebrewer that has been at this great hobby for about 7 years. I have a question about my first (yes, first) batch of beer using a lager yeast. Is there a good temp to let a cali common beer ferment either in the primary or secondary? Should those temps differ at all? I have had my beer in the primary for a week now and it is about time to move it over to glass and let it finish. Thanks for your help and I look forward to your comments.

I just happen to have my copy of "Brewing the World's Greatest Beers" by Dave Miller with me (formulating a recipe). There are 3 different recipes for CC in his book; The first has pitching and fermentation temperature at 60-65 F. It then says to store one week at room temp, then 4 weeks at temps as cool as possible without freezing. The second recipe says pitching and fermentation temperature at 62-68 F. and to store 1 week at fermentation temp, then 4 weeks at temps as cool as possible without freezing. The third recipe has just about the same instructions, but tacks an extra week onto the secondary, cold storage time.
