View Full Version : Wrong season for saison

I brewed 15 gallons of 1.080 saison Monday I think, racked into 2 buckets for normal saison and a carboy for my Orval/Jolly Pumpkin saison. Of course it was around 100F in my garage when I got it finished so I figured the temp was perfect for a saison. Then the weather changed, it got cool and rainy. I have my Brett saison in the house at 70F(and damn does it smell good) but the buckets are sitting at 80F and stalled at 1.050. The taste is already amazing, but I'm going to have to break out the heating pads to get this beer going again. Who would have ever figured August in southern New Mexico would be too cold to brew beer!!!:D

Does it make me too much of an optimist to see your situation as the beer god's smiling on you becuase you get to spend more time with your beer due to the weather change?

Well, today I kegged my pale ale made with all homegrown Cascades, and I turned the fridges off to my fermentation box. I put my two buckets of saison in there on a stool and put a small space heater on the floor. I got the temp up to 90 in the box and both buckets are gurgling away. It shouldn't take too long now.

I guess I'm lucky. I brewed a Saison 2 weeks ago and the weather was nicely warm. The beer stopped bubbling right before it cooled down here a few days ago.
