i formulated a recipe for a 10 gallon batch and have just started "creating" my own recipes
6lb Pale malt extract
2lb L DME
2lb Car Viene grains
1 oz select hops at 60 min
1 oz select hops at 10 min
I already brewed this and ended up with about 8.5 gallons, but my OG is only 1.040. I know this is low but any suggestions? It is fermenting away now and smells great. Just lookin for some input

Should be fine, probably more of a Vienna with it being on the lighter side.

1.040 for 8.5 gal is a little high. Using ProMash, I get 1.038 at 100% efficiency.

I would recommend upping the extract, and adding Munich malt for both color and melenoidins.

Try this:
12# Pale LME
2# Munich
2# Caravienne
1# Caramunich 60 (for color)

3.5 oz Hallertauer (4.5%)-60 min
1.5 oz Hallertauer (4.5%)-10 min

Should give you ~1.057
