My dad put a 5 gallon bucket full of wheat aside for me when he finished the harvest.
Now what can I brew with it?
It looks like a belgian wit for sure, but what else might be a good option for unmalted wheat?

Lambics use unmalted wheat.

Or will this carboy be ruined and only useful for lambics only?

Otis, With a glass carboy, you should be fine, although I would both clean AND sanitize the #$@# out of it. You might even try letting it sit in the sun between sanitization sessions (the sun is a great natural sanitizer, to a degree).
If you are using a Better bottle, plastic carboy, it will always produce infected beer until the end of time.

I agree with beerking. If its glass you can convert it back Otis, but I would bleach it. Either that or have a Lambic carboy.

I plan on buying a better Bottle Plastic for regular run of the mill beers.
I plan on using a glass one for a lambic.

Better Bottles work better for sour beers, they allow in more oxygen. Just dedicate one to sours, your lambic should sit for 2-3 years anyways.

Hmmm....I bleach the hell out of it...after all, won't hurt the glass willl it? Then the sunlight will take care of the bleach :)

Yes, the sun should help remove the bleach.
Careful about how much you use. Too much bleach is actually less effective at killing those critters than using the recommended amount (I can't remember the amount right now, as I have not used bleach in years).
I would recommend considering a strong (double strength) StarSan solution instead of, or in addition to bleach (not at the same time! Bleach and acid makes green chlorine gas, aka "mustard gas!"). Better safe than sorry. Hate to think you may end up with a lambic style doppelbock by mistake. :eek:
(On second thought, that might be kind of good!)
