I have one simple question for anyone here that works/owns a brewery - how do you carbonate the beer if you dont use natural carbonation (ie priming sugar)? This has probably been asked thousands of times before, but, I just want to know.
well, i don't fall into that category...but it's called forced carbonation.

I use(d) a carbonation stone for all the beers except for the firkins which were racked to firkins when I reached a specific gravity I predicted would give me the best results for that beer.
I cannot think of any of the brewers I know who use priming agents for their beers as the time invovled for natural carbonation would add several days/weeks to the process.
