View Full Version : Interesting ingredients to add to my beer.

I was watching a Sam Adams commercial the other day. The guy mentioned some of the ingredient that he adds to some of his beers. For the sake of this post, we'll call them exotic ingredients.

Coriander (Cilantro)
Peppers
Etc

I am looking at trying to add some ingredients to one of my future beers.

Quest. 1:
Do I need to add these ingredients to the mash or to the boil, or add to the primary?

Quest. 2:
What type of ingredients make for a good (tasty) addition? What are some that others have tried and how much and in what types of combinations.

Corrianders is pretty easy to use I brewed up a batch of belgium wit awhile back added it the last 10 minutes of the boil. As far as peppers theres a thread brewing with jalapenos on here....alot of differnet opinions, I put mine 30 minutes into the boil then roasted a couple more and put them into my secondary.

Don't forget the orange peel, it compliments orriander nicely in wit beers.
I think corriander compliments any fruit beer nicely. It kind of adds a little zest somehow. 3/4 oz. coriander seeds (crush & add during last 5 minutes of boil)

I'm going to be brewing a hefeweizen in the next week or two that I decided to attempt a little lemon zest in the secondary for fun.

I did an orange corriander heff last spring and it went off great - everyone licked it. I'm not a big fan of these typs of beer, but it keeps the wife happy ;)

I'm going to be brewing a hefeweizen in the next week or two that I decided to attempt a little lemon zest in the secondary for fun.

We did a straight orange hef and used orange zest along with some of the juice from the orange - the zest has a bit of bitter to it - it came out pretty nice. We have also used bitter orange in some of the brews.

If you serve it in glasses instead of just pouring it on the counter, they can "drink it" instead of "licking it." :D

Well, sonce we a re opn the subject, what about grains of paradise? another good spice addition for a wit
