I have been brewing for a short time now, about to start my 5th batch, and have a hard time leting my HB age. My last batch was a 1.086 Irish Ale and even tho I KNOW that it needs to age...I just can't stop drinking it! It is so good, but SO annoying. Does anyone else have the same problem as me? If so can anyone tell me how to save 1 or 2 bottles so I can taste them after a reasonable ageing period?

when i put my beer in the basement, i always pull out a couple bottles and hide them under the bottom shelf. even though i know they're there, out of site, out of mind.. ya know?

Sorry, I have never been able to save my beers....I'm like you, they're too good to leave lying in the basement...

HERE'S a thought... if you get enough batches going at once, you won't have time to drink them ALL, and henceforth, some of them will properly age. I'm guessing all this would take is a second carboy, airlock, and enough bottles. Try it - when we get ahead around here I'm going to do the same!

Fretless, that's exactly what I do. I will have as many as 7 batches going at one time...

Give some to your mom or other family member and tell them that no matter how much you cry that they can't give it back to you for 3 months. I would suggest that this person be a non-beer drinker, though I can't understand why they exist.

Paul, you just need more equipment so you're brewing more beer than you're drinking. It's the only solution that I can think of that's at least going to work....

Hell if I got more equipment I'd just start brewing low OG beers 99% of the time so that I COULD drink 'em as fast as I make 'em...I'm starting to think there is no way to win here...maybe the mother idea will work. I'll have to try that.

here's what I do, from every batch I put three bottles into this box and vow to not touch it until Christmas then if I feel like it I might drink it then or after. But by time xmas comes along I might feel like aging it longer. You must use the power of the force son!
i try and brew a 5-gallon batch every other weekend. now that i keg, what i do is bottle a 6-pack of 12 oz. bottles and 4 16 oz. ez-caps and keg the rest. i let the bottles sit for longer now that i'm kegging.
however, i used to drink the bottles as soon as they were ready and ever aged any.
