After the 4-8 day fermentation period, I want to put it in a cornelius keg. Can I avoid the priming sugar and force carbonation with a co2 tank? If I did that approximately how long would it take for the beer to be ready to drink?

I want to get this Stout done as fast as I can and am willing to trade off a lil bit of taste for time. (as long as it will still taste like a good stout.).

Would it be possible to have it done in 2 weeks by March 13th for the NCAA tournament(I have to start on it on Sunday Feb 24 ?

I'm thinking 8 days for fermenting, and then I'll have anywhere from 7-12 days to condition the beer and then to force carbonation and drink the next day.

Any input would be greatly appreciated.

Thanks

You will get full carbonation in 7 days if you have the keg refrigerated and on gas at your intended serving pressure.

More to the point though, is that brewing a good beer takes time, and there's really no way available to the homebrewer to really rush things. If you're looking to trot the hombrew out to friends, give it enough time to mature properly. You want them to be impressed with your brewing, not ambivalent (or worse). I'd recommend getting commercial beer, or if you have a local craft brewer, a keg of their beer, and serving your guests (and yourself) good quality, fully aged beer, rather than serving a beer that's still pretty green and pehaps spoiling the opportunity to convince your friends that they want to brew (and then you can go drink their homebrew, too, rather than having it be a one-way street).

Right, How will the stout taste though? Also, we are Notre Dame Irish fans so this might even turn out to be a better deal.
I was thinking of chilling the beer and then after chilled force carbonating the beer by shaking the day before serving. Any comments on that?

Thanks.
