Im trying to build a recipe using the can of brewferm kriekbier Ive had sitting around so i decided on ordering some belgium wheat extractDME..the syrup extract is 3.3 lbs. i believe. any suggestions on the amounts of wheat DME or any other malts i should add? How about the hops and yeast , a lager yeast maybe? maybe some hallertau in the boil...what do you guys think ? Ive never even tried a kriekbier before not much knowledge to go on, but a cherrry wheat seemed a good idea...

Well, I would use all of both extracts. For hops, I would use 1/2 oz of Tettnang (or 1/2-3/4 oz Saaz) for 60 min. Wheat beer are hopped very lightly. For yeast, Weihenstephan or some other German weiss yeast or Belgian Wit. I would also get a cherry flavoring that can be added t bottling so that you can adjust the cherry level up if you wish. You may not get the cherry you are looking for with the kit alone.

i recently made a cranberry wheat from all extracts, and this is what i found..

- about 6lbs of 60/40 wheat/barley extract
- 1.5 oz saaz (3.0%AA) for 50min
- .25 oz saaz 20min
- .25oz saaz 2min
- 12oz cranberries, secondary
- forget what kind of ale yeast

results (at bottling):
a very pronounced cranberry aroma, slightly less, but certainly noticiable cranberry flavor. pretty much no bitterness whatsoever. i wish i'd used maybe a full 2oz saaz for a full 60 min boil. i didn't want a strong bitterness, however, i got *no* bitterness.

at 4.0% ABV, its a very good beer, almost exactly what i was aiming for. could use a touch more bitterness... anyway, this one is due to be opened for thanksgiving dinner. already been in the bottle 2 weeks, should be perfect in another week!

so, to make a long story longer, i'd use both cans of extract and more like 1 oz of tettnanger (or 2oz saaz) for 60 min. this is my personal preference based on my recent experience.

either way, you'll have a good beer! and you can always tweek the recipe next time.

thats perfect sallad...ive decided to put the full 2 oz. of saaz in the boil in 20 min increments. also since it is a kriekbier extract ill add just a few dark cherries to primary...pretty much exactly the same as your recipe but subst dark cherries for cranberries.. I will heed your advice and try to hop it up a bit ill sample when i rack to secondary and may even dryhop with more saaz(can you tell what my favorite hop is..lol)
I sure appreciate the advise guys...Ill let ya know how it turns out.
Im thinking now as bierboy suggested maybe tettnanger as the bitter hop. hmmmmmmmm either way Im gonna prime 1/2 with honey and 1/2 with the wheat extract to see the difference.

updated....heres how it turned out at bottling

Beer: cherry wheat Style: American Amber Ale
Type: Extract Size: 5 gallons
Color: 15 HCU (~10 SRM)
Bitterness: 32 IBU
OG: 1.056 FG: 1.007
Alcohol: 6.3% v/v (5.0% w/w)
Boil: 60 minutes SG 1.112 2.5 gallons
3 lb. 3 oz. kriekbier extract
1 lb. Amber dry malt extract
3 lb. 3 oz. Wheat extract
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 45 min.)


tasted sample at bottling i did get some bitter in it from the northern brewers hops..slight cherry flavor mostly a tangy wheat flavor....i think some crystal or some caramel malt would have made it better but i was trying for a simple extract brew...only time will tell....this is my first batch going into the Tap-A-Draft system so i should be tasting it shortly....I know now the next thing i wanna see in the TAP bottles is either a heavy stout or robust porter I have collected a huge range of specialty grains to try and Im just chompin at the bit to see how much better my beers will be going to a partial mash recipe w/ the Tap-A Draft
