I have a Blonde Ale that I'm thinking of adding some Honey to when I transfer to the secondary. Anybody ever do this? I was thinking of taking around 1 liter of hot water and adding 1 pound of honey which would be added to the secondary.

That will definitely work. But to be on the safe side, I'd be sure the honey/water mix is heated up to 160F for 15 mins to pasteurize it before adding it to the beer, or you run the risk of infection. I recently learned that honey often has CLOSTRIDIUM BOTULINUM (the bacteria that causes botulism toxin) and that's why it's not safe to give it honey to infants. You don't want to get that shit in your beer.

yeah, the ph level of honey keeps it in check but that will not be the case once it gets into your beer. An adult can fight off some of it because of our digestive systems but children under one do not have the right tools for the job. You may know more than me BrewDog but I thought the magic temp was 190 F

IMPORTANT NOTE: do not give your infant a bottle of Honey Blonde Ale... unless you pasteurized the honey first.

Well I guess if I use maple sugar instead it'll be ok to serve it to the whole family! Won't have to worry about the stuff the bees puked out!

My wife enforces standards for Early Head Start child cares and is on an advisory board for state child care regulations. My father-in-law is a beekeeper. They have had a discussion or three about this. I like to bring the subject up at Thanksgiving and Christmas and such.

Nope, the magic number is 160F. Just remeber if you are doing this with fruit, do not exceed 170F...oyu'l set the pectin.
