I've always thought that beer cheese soup was one of the staples of any brewpub's menu, and I 've probably sampled soups from about 100 places around the country. Most of them are very similar in flavor (kind of like the "just for joy" home beer cheese soup mix), and only vary in taste a little bit either way.
However, Great Lakes Brewing in Cleveland has a very unique, very tasty soup; it's a blend of English Stilton and Cheddar cheeses with their Dortmunder Gold. Man, this soup is great. It's very tangy (the Stilton dominates), and it's the only beer cheese soup I've tried where you can actually sense some of the hop flavor bursting through (the Dort is a nicely hopped lager).
Any other unique or recommended beer soups out there?
