View Full Version : Dry Hop Time

I'm leaving for vacation tomorrow and I currently have an Imperial Pale Ale in Secondary. I dry hopped it with an ounce of Cascade Whole Leaf Hops. I don't really have time to bottle tonight and the recipe says to dry hop it for 10 days. Its been 14. I was wondering if another week will have any harmful effects on the beer or significantly change the intended outcome??

Not with an IPA. Remember, these beers were meant to be shipped across the seas and sustain men for months at a time. Hops preserve what you've got in the carboy, to a point. Dry hopping '''technically''' adds only aroma, so the taste will be minimally affected. As long as you didn't shake it up too much and allow that dreaded 02 in, you should be fine. Relax. Have a home brew.

you never know what may come out of the hops after that long. I'd go ahead and move it to a tertiary before leaving

Damn! We left early this morning (before I caught the last post on the thread) with the hops still sitting in the secondary. I'll be back Tuesday, which will have made it 21 days exactly as I just checked my brew calendar. Well, if it does make some funk in the beer, at least I've gained some experience. That would be a sad day though as this is the first brew I've had that tasted phenomenal before bottle carbonating it!

I sometimes will dry hop right in the keg. 21 days in secondary won't ruin it, but it will probably need a couple weeks for some of the grassiness to go away, if it picks that up.

I didn't mean to scare you. It will probably be fine. I was just noting that if you thought the choice was between spending time to bottle and leaving it, you should consider a transfer.

My IIPA was dryhopped with 3-4oz of hops for 28 days. It is freakin' awesome!
