View Full Version : Favorite Yeast

A question only a true beer geek could appreciate:

If you were stuck on a desert island with a limitless amount of malt, specialty grains, extract, etc but had to choose one yeast - what yeast would you choose?

I'm very enamored with with Wyeast #1318 London III - that's what I would choose. It creates the perfect slightly fruity taste for me and still leaves some malt unless used at a higher temp and then ferments out pretty well.

Everyone else?

WLP 002 from White Labs. It is their English Ale strain and is a great all around strain.

if i had to choose, i'd say my favorite style is american pale ale and/or IPA... so i'd prolly go with wyeast 1056 american ale. and lots of perle, cascade, and willamette hops! and maybe some bullion too.

I also vote for WLP 002 (English Ale) from White Labs.....I brewed my best brews with that yeast.

I would go with Wyeast British Ale. It is pretty flexible as far as what I can use it for. Another one would be Wyeast Irish ale.

I'll put in a vote for White Labs WLP051 California Ale V yeast. I haven't played around with this one too much, but I like what I've tasted so far.

Besides, a full bodied session beer every now and then is good....

Well having only brewed twice so far, I'll have to vote for WLP 002 from White Labs. I used it in my brown ale and it is coming along nicely.

Did not notice any dry yeasts yet. I'd pick Windsor...slightly sweet and ferments at the largest temp swing I've ever seen...60-84<---personal experiance. Plus you could get ALOT in a small place.

Irish Ale yeast. White Labs WLP0004. I used it in an Old Speckled Hen clone (best batch yet)

I'm brewing my first all grain batch this weekend. I'm brewing an Old Ale and I'm going to try White Labs Bedford English Ale yeast. Any experience with this yeast? The recipe calls for Thames Valley Ale yeast, but I could not find it. I found the recipe in a CAMRA book called "Brew your own British Real Ale". Tons of great recipes, but some of the ingredients are hard to figure out. ie, white sugar. The book's out of print, but I found a used copy on Amazon.

I've never used that strain so let us know how it tastes.
