I swear, i do a search on this stuff before i post so many questions. Anyhow, ive got on deck a magic hat #9 clone and the recipe calls for 3.3# of apricot puree, which i have purchased (Oregon) This will be my second time using puree (first a blueberry wheat in secondary still) The recipe calls for a 5 day secondary before botteling. Do you think the additional fermentation will be done by then? The original beer only has a HINT of apricot, so i can understand not overdoing it, but is there a chance for bottle grenades here? As long as your primary fermentation was relatively healthy (ie, did not take three weeks), your yeast should chew through the sugars from the puree within a couple days, no problem. If you are really worried, you could rouse the yeast (swirl your carboy to get the yeast back into suspension) three days after adding the puree.

I have made a few fruit beers with puree, and have had good results. What I do is put the puree directly into the primary when I add my wort. Then for the first 3 days of fermentation, I pick up the bucket and swirl everything around in there. (Tilt the bucket away from the air lock so its at the highest point, otherwise you might get krausen coming up through, trust me) This is because the puree has a tendency to settle out before it can ferment and get into the beer. Then I let it sit still for another 3 days and rack into the secondary. Leave it in that for however long you can, the longer the better.

Well, i had a healthy one week long primary, and racked it to seconday, with the puree, about 5 days ago. There is a thin skim of foam on the top, and some fermentation taking place (visible in the airlock) Though the recipe calls for a 5 day secondary, im gonna wait until there is no more activity, as id like to avoid bottle bombs. Im psyched about this beer as Magic Hat #9 is a favorite of mine when were home visiting family! Peace,Chris
