View Full Version : Cloning a cask ale?

So last winter I found an interesting beer I'd never seen before: Winter's Bourbon Cask Ale - made by Anheuser Busch. I was shocked at how much I liked it. It had vanilla, a decent all around taste to it, and even hints of the bourbon they threw in the name.

I remembered that beer today, and tried finding a clone for it, not that many people would seem to want to. I couldn't find any thread about somebody trying to clone one. I'd really like to try to do an extract brew (with maybe added ingredients) that cloned it.

So how would one go about making a cask ale with vanilla and bourbon flavors, minus the cask?

vanilla beans soaked in vodka(a little goes a long way) and oak chips. or just oak chips. Oak chips can lead to some vanilla flavors. Bourbon barrel staves cut up and thrown into the fermentor can give the bourbon flavors. Heck try a few drops of bourbon extract.

Your easiest route is to do a search for a vanilla bourbon recipe on any of the beer boards. If you're looking for aged in a cask use wood chips.
As for making it a "Cask Ale"/Real ale, it's not the recipe it's the process. Basically a cask ale is "alive" in the serving vessel. When I make mine using a corny keg, I lightly prime with sugar and hook it to the engine after a week or so.

I think the jack daniels smoking chips will be the way to go. Try to put a bit more flavor in it while you're at it....the Winter that I tasted could have used just a bit more oak & vanilla, a little, not much. As for the base beer, I'd shoot for a sweeter brown ale, that has some nice chocalate notes.
